Is it just me, or is now the perfect time for a pumpkin-themed recipe?
As the weather starts to cool down, and we roll into the holiday season, nothing is better than a warm delicious soft cookie to start your day off right!
You may be thinking, “How does this cookie qualify to be the perfect breakfast?”
Well, because they are filled with protein, healthy fats, nutrients, and natural sugars, they make for a well-balanced and healthy breakfast that will keep you full and give you the fuel you need to begin your day.
Instructions
- Preheat the oven to 350F.
- In a food processor, pulse the oats until they (almost) turn into a flour consistency.
- Then add the coconut flakes and chia seeds into the food processor.
- In a separate bowl, add the pumpkin, nut butter, bananas, pumpkin spice, baking powder, salt, and vanilla. Once mixed together, add the dry mixture from the food processor into the bowl and mix thoroughly.
- Fold in the chocolate chips until combined.
- Roll into balls (about 1.5 tbsp of dough per cookie). Place the cookies on a baking sheet lined with parchment paper and press down slightly on each cookie to flatten them.
- Bake for 12 minutes at 350F, or until the edges are golden brown.
- Once you take the cookies out of the oven, let them cool for at least 15 minutes.
- Keep any leftovers in a tupper-ware container in a cool dry place, or in the freezer for longer storage.

Healthy and Delicious Pumpkin Breakfast Cookies
Nothing is better than starting your morning with a yummy healthy breakfast packed with protein, healthy fats, and nutrients.
- 1 cup rolled oats
- 1/2 cup coconut flakes
- 1/4 cup chia seeds
- 1/2 cup pumpkin puree
- 1 1/2 small bananas (or if you would like a sweeter cookie, replace the banana with 1/4 cups of maple syrup )
- 1/4 cup nut or seed butter of choice
- 1 tbsp pumpkin pie spice
- 1 tsp baking powder
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1/4 cup chocolate chips (chopped walnuts would be good too)
